The process of freeze drying pulls out water but not nutrients. It retains up to 96% of its Nutrional value without adding preservatives, sugar, etc. as you would other preservation methods. Look at the color of herbs in the grocery store then look at a freeze-dried herb-it will be a completely different color, be lacking in flavor, and not rehydrate as fresh. With freeze drying you can rehydrate a product and use it just as you would a fresh ingredient. Ever try to make guacamole and realize your cilantro is bad or your avocado is rotten? If you have both freeze dried on hand you can rehydrate as fresh and not notice the difference in taste or color!

It is regular, popular candy that has been through a process that removes moisture and changes the texture of the candy. The machine vacuums the water out of the candy then sublimates. The candy is completely transformed and has an intensified taste. Some candy like taffy and jolly ranchers become light and airy. Others, like airheads and high chews become hard and crunchy.

If packaged properly, they can last 25 years!!!! Be sure when opening backs with oxygen absorbers be sure to seal the back asap. Foods can pull moisture from the air if left unsealed which will ruin the product.
